Another recent event — 80th birthday at Moffat Mansion
In summer 2025 I cooked a private 80th birthday dinner for around 14 guests at Moffat Mansion in Beattock, just south of Moffat. The mansion’s Victorian dining room — original wood panelling, two crystal chandeliers, and a long oval table that seats the full party comfortably — is one of my favourite settings in this part of Scotland for milestone birthdays and intimate family celebrations.
For an 80th, the format I usually recommend is a four- or five-course tasting menu paced slowly enough for speeches, photographs, and the unhurried feeling of an occasion that doesn’t need to be rushed. The kitchen at Moffat Mansion is well-equipped for a chef working from scratch, and the dining room itself does most of the work of setting the atmosphere — candles down the table, the original chandeliers lit, family pictures along the walls. Moffat Mansion is one of three regular venues I cook at on this side of Scotland, alongside Beechwood House in Moffat and Telford House. A typical booking starts with a phone call or message. We talk through the event — how many guests, dietary needs, your venue or home, and the kind of menu that would suit. Within 48 hours I send a proposed menu and a per-head price. Once you approve, I source the ingredients (Scottish produce wherever possible), arrive ahead of the meal, cook in your kitchen, plate and serve each course, and clean down before I leave.
Most bookings are confirmed 4–12 weeks in advance, but I can often accommodate shorter notice — particularly midweek and outside high wedding season.

Weddings are not the only celebrations I cook at Beechwood House: in August 2026 I catered a hen party dinner for twelve at Beechwood, from canapés to plated desserts, and two of the guests left five-star reviews the next morning.

What I cook
The menus are built around what you and your guests want, but the recurring themes are:
Italian techniques meet Scottish ingredients. Slow-cooked ragùs using Scottish beef. Fresh handmade pasta with local cream and butter. Seafood from the Solway and the west coast. The fillet of beef Cynthia mentioned is one of my signatures — Aberdeen Angus, slow-rendered and finished with a Barolo reduction.
Restaurant-style plating, not buffet trays. Every course is delivered to the table the way it would be in a fine-dining restaurant — the kind of food and service you would expect at a Michelin-recommended restaurant, in your own home.
Generous portions. I’d rather you have leftovers than guests leave hungry.
A typical wedding menu runs three to five courses, with options for vegetarians, vegans, gluten-free guests, and any allergies built into the menu from the start — not added as an afterthought.
What it costs
Private dinners run from £75 to £180 per person depending on the number of courses, the ingredients, the headcount, and any special requests. Wedding catering for 12–30 guests is priced per event after we agree on the menu, with a tailored quote sent within 24 hours of your enquiry.

Do you cook in self-catering cottages and private homes?
Yes — most of my Moffat and Dumfries & Galloway bookings are in private homes or self-catering houses. I work in whatever kitchen you have. If your kitchen lacks something specific (a particular oven, a sous-vide bath, an extra pan), I bring it.
How far in advance should I book?
For weddings, ideally 3–6 months. For private dinners, 4–8 weeks is comfortable. I can sometimes do shorter notice — call me and ask.
Do you cook for hen parties and small celebrations as well as weddings?
Yes. Hen parties, anniversary dinners, milestone birthdays, retirement parties, and corporate retreats are all regular bookings. The minimum is usually 6 guests; the maximum depends on the venue.
Can you handle dietary requirements?
Yes — gluten-free, vegetarian, vegan, lactose-free, nut allergies, and religious dietary requirements are built into the menu from the start. Mention them when we first speak.
What if my guests want a relaxed buffet rather than a plated dinner?
Plated dinners, family-style sharing menus, BBQ-and-buffet for outdoor venues, canapé receptions, afternoon teas — whatever suits the day. We design it together.
Do you stay through the evening?
For weddings and longer events, yes. I stay until the meal service is complete and the kitchen is clean. You shouldn’t have to think about the cooking once your guests have arrived.
