What an Evening at Home Actually Looks Like
Most people have never hired a chef before and are not sure what they are agreeing to. Here is the whole thing, start to finish.
Before the day
We agree a menu by email or phone. You tell me the occasion, how many people, and anything anyone cannot eat. I build the menu around that and around what is good that week — not from a fixed list. Allergies and dietary needs are designed into the menu rather than worked around on the night, and a change the day before is not a problem.
The afternoon
I arrive around three hours before you want to sit down, with everything already bought. Nothing is pre-cooked at a unit and reheated in your oven. Bread, pasta, sauces, stocks — made in your kitchen, on the day. That is the part people notice.
Service
You are with your guests. I plate and serve each course at the pace of the table, so nobody is waiting and nothing is sitting under foil. If the conversation is going well and everyone wants a longer gap before pudding, that is fine — that is the advantage of having the kitchen in the next room.
Afterwards
Your kitchen is left cleaner than I found it. Every pan, every surface, the hob, the bin. You should not touch anything. I have written about this at more length in do private chefs clean up after cooking? because it is the single most common question I am asked.
Will My Kitchen Be Good Enough?
Almost always, yes. This is the worry that stops people booking, and it is nearly always unfounded.
I cook in ordinary domestic kitchens most weeks of the year. What I actually need is an oven that holds its temperature, a couple of rings, a sink, a work surface roughly the size of a kitchen table, and somewhere to set plates down. I bring my own knives, pans and small equipment. I do not need a second oven, a range cooker or an island.
Small kitchens are not a problem — they are normal. A galley kitchen in a flat in Edinburgh works perfectly well for eight people. What matters far more than the size of the kitchen is how many guests are sitting down and what is on the menu, and we settle both of those together beforehand.
The Occasions People Book Me For at Home
Dinner at home is usually about an occasion that deserves more than a restaurant booking — or one where a restaurant simply will not do, because you want the children there, or the dog, or your own table.
- Private dinner parties — six to thirty people, several courses, at your own table.
- Birthdays and anniversaries — the milestone ones, where nobody wants to be watching the clock for a table.
- Hen parties — often a cooking class in the afternoon and dinner in the evening.
- Fresh pasta made in front of you — rolled and cut in your kitchen, not brought in.
- Wedding celebrations at home — smaller weddings and the dinner the night before.
What It Costs
Menus start at £75 per person, and most evenings land between £75 and £180 a head depending on the number of courses and the ingredients. VAT and travel are included — the figure I quote is the figure you pay, wherever in Scotland you are. There is no separate mileage charge for coming to the Highlands. A deposit between £300 and £1,000 secures the date, depending on the size of the booking, and the balance is settled afterwards.

I am based in Fife and cook across Scotland and into northern England. Travel is included, so distance changes the drive, not the price.

If you are renting a house, lodge or cottage rather than cooking in your own home, the practicalities are different — an unfamiliar kitchen, a full house of guests, and a week rather than an evening.
